แผนงานวิจัย การพัฒนาการท่องเที่ยวเชิงอาหารมุสลิมในกรุงเทพมหานคร เพื่อยกระดับการท่องเที่ยวเชิงวัฒนธรรมสู่สากล ภายใต้การสนับสนุนทุนอุดหนุนการวิจัยจากสำนักงานการวิจัยแห่งชาติ (วช.) มีวัตถุประสงค์ 1) เพื่อจัดทำเส้นทางท่องเที่ยวเชิงอาหารมุสลิมย่านคลองบางหลวงที่เชื่อมโยงกับแหล่งท่องเที่ยวอื่น 2) เพื่อจัดทำข้อเสนอแนะเชิงนโยบายการพัฒนาการท่องเที่ยวเชิงอาหารมุสลิมในกรุงเทพมหานครเพื่อยกระดับการท่องเที่ยวเชิงวัฒนธรรมสู่สากลผลการวิจัยพบว่า การจัดทำแผ่นที่เส้นทางท่องเที่ยวเชิงอาหารมุสลิมคลองบางหลวงที่เชื่อมโยงกับแหล่งท่องเที่ยวอื่น มี 2 เส้นทาง ได้แก่ 1) เส้นทางจากปากคลองบางหลวง ถึง ริมแม่น้ำเจ้าพระยาฝั่งตะวันตก และฝั่งตะวันออก แหล่งท่องเที่ยวเชิงอาหารมุสลิมที่โดดเด่นอยู่บริเวณมัสยิดกูวติลอิสลาม หรือมัสยิดตึกแดง และ 2) เส้นทางจากคลองบางหลวงด้านใน ถึง ท่าน้ำตลาดพลู มีแหล่งท่องเที่ยวเชิงอาหารมุสลิมที่เป็นเอกลักษณ์ชุมชน คือ บริเวณทางเข้ามัสยิดบางหลวงซอยหน้าสน.บุปผาราม ณ เรือนพระยาราชานุประดิษฐ์ บริเวณภายในมัสยิดบางหลวง และบริเวณมัสยิดต้นสน การจัดทำข้อเสนอแนะเชิงนโยบายการพัฒนาการท่องเที่ยวเชิงอาหารมุสลิมในกรุงเทพมหานครเพื่อยกระดับการท่องเที่ยวเชิงวัฒนธรรมสู่สากล หน่วยงานทั้งภาครัฐ สำนักวัฒนธรรม กีฬาและการท่องเที่ยว (สวท.) กรุงเทพมหานคร นำข้อเสนอแนะเชิงนโยบายฯ ไปใช้พัฒนาและส่งเสริมด้านการท่องเที่ยวเชิงอาหารมุสลิมย่านคลองบางหลวง โดยแบ่งออกเป็น 3 ส่วน คือ 1) ข้อเสนอแนะเชิงนโยบายในส่วนของอุปสงค์ (Demand) เน้นสร้างจิตสำนึกให้นักท่องเที่ยวมีความตระหนักรู้ในการท่องเที่ยวเชิงอาหารมุสลิมเพื่อสุขภาพ 2) ข้อเสนอแนะเชิงนโยบายในส่วนของอุปทาน (Supply) ส่งเสริม สนับสนุนให้ชุมชนและผู้ประกอบการร่วมกันพัฒนาแหล่งท่องเที่ยวเชิงอาหารมุสลิมในการทำงานแบบมีส่วนร่วมเพิ่มมูลค่าของสินค้าและบริการชุมชน และ 3) ข้อเสนอแนะเชิงนโยบายในส่วนองค์กร ควรกำหนดแผนยุทธศาสตร์ด้านการท่องเที่ยวเชิงอาหารมุสลิมและสนับสนุนงบประมาณจัดกิจกรรมส่งเสริมในระดับชุมชน ระดับเขต และระดับชาติอย่างเป็นรูปธรรมคำสำคัญ: การท่องเที่ยวเชิงอาหารมุสลิม/ ย่านคลองบางหลวง/ สู่สากล<br><br>AbstractResearch plan: Developing the Muslim Gastronomy tourism In Bangkok for upgrading the Cultural tourism to internationality. This study was supported by the National Research Council of Thailand (NRCT) that aimed to 1) produce the Muslim Gastronomy tourism route in the Khlong Bang Luang area linked to other tourist attractions. 2. produce the policy recommendations for developing Muslim Gastronomy tourism in Bangkok to upgrade Cultural tourism to internationality.The results showed that : 1. The gastronomy route in Khlong Bang Luang area linked to other tourist attractions had two routes as follows: 1) the route from the entrance of Khlong Bang Luang to the Chao Phraya River West Bank and East Bank: the noticeable Muslim Gastronomy attraction was around Goowatin Islam Mosque or Tuk Dang Mosque, and 2) the route from the Khlong Bang Luang Interior to Phu market pier: the Muslim Gastronomy attractions uniqueness were around the entrance of Bang Luang Mosque that was at the near the Soi of Buppharam police station at Phrayarajanupradit House area, Bang Luang Interior Mosque area, and Tonson Mosque. 2. The policy recommendations for developing Muslim Gastronomy tourism in Bangkok to upgrade Cultural tourism to internationality was used with the Government Organization, the Culture, Sports and Tourism Department (CSTD) Bangkok to develop and promote the Muslim Gastronomy tourism in the Khlong Bang Luang area. The policy recommendations are divided into three parts as follows: 1) on Demand emphasized the tourists’ awareness to cultivate the realization of Muslim healthy food, 2) on Supply emphasized the promotion and support communities and entrepreneurs to jointly develop Muslim Gastronomy attraction in participatory work to add value for the community products and services, and 3) in the organization should formulate a strategic plan for Muslim Gastronomy and support the budget for bolstering activities at the community level, county level and national level into the tangibility.
