โครงการวิจัยย่อยที่ 7 ได้ดำเนินการศึกษาข้อมูลองค์ประกอบ โครงสร้าง และสมบัติเคมีกายภาพของแป้งข้าวจากพื้นที่ อ.เขาวง จ.กาฬสินธุ์ และทำการเปรียบเทียบสมบัติแป้งดังกล่าวกับข้าวที่ปลูกในระบบกระถาง โดยข้อมูลดังกล่าวได้รับการตีพิมพ์ในวารสาร Foods (ISI, Q1) และยังได้ทำการเผยแพร่ข้อมูลดังกล่าวในฐานข้อมูลสตาร์ชข้าวไทย ThRSDB: a database of Thai rice starch composition, molecular structure and functionality (URL : thairicestarch.kku.ac.th)<br><br>This project has studied starch composition, structure, and physicochemical properties of field-grown Thai rice cultivars from the area of Khaowong district, Kalasin province in comparison to the same cultivars grown in the pot system. The data were published in Foods journal (ISI, Q1), and are now available in ThRSDB: a database of Thai rice starch composition, molecular structure and functionality (URL : thairicestarch.kku.ac.th).
